最近ちょっと太り始めている気がする。
体重計っても1kg程度の誤差なんだが、どうも太りそうな食生活だ。
炭水化物はあまり食べないようにしているが、てっとり早く空腹を満たすなら結局炭水化物が楽だ。
玄米が良いのだが、玄米は準備が必要。なのですぐに空腹は満たされない。かといって米も炊きあがるまで時間がかかるし結局パスタを活用することになる。
これが旨いのだ。
市販のパスタソースより、自分で作るソースの方が旨い。カルボナーラなら生クリームありバージョン、生クリーム無しタマゴだけバージョン、生クリームの変わりにめんつゆ和風バージョンなどなど。チーズがあればチーズも入れる。チーズはいわゆる粉チーズ（パルメザンチーズ）は使わない。とろけるチーズで十分だ。
フライパンで具を炒め、そこに生クリームを流し込み一気に混ぜ合わせ、その勢いのままチーズを入れる。チーズは一瞬で溶けるのでそのタイミングで茹でたパスタをフライパンに投入。
パスタとソースを一気に混ぜ合わせる。このときにすかさず塩&コショウでで味を整える。あとでタマゴを入れることを想定した味付けだ。
そしてここからが時間との勝負だ。火をとめ、混ぜながら全体の粗熱を取る。
ここがポイント。
本当はこの時にボウルなどに移してそこへタマゴ投入すると失敗しないのだが、フライパンでも粗熱を取ってやってもうまくできる。よく「スクランブルエッグになってしまった・・・」という声を聞くがこれは火を止めていないからだ。
粗熱が取れたタイミング（それでもアツアツだが）でタマゴを投入。一気に混ぜ合わせる。
ちなみに私は「全卵派」である。
卵白を残したところで使うのは面倒だし、「コッテリ」が食べたいときは生クリームとチーズで十分調節できる。
自宅で作るなら「つゆだく」も可能だ。わざとつゆだくにしてバゲットに付けて食べるという楽しみ方もある。
これが激ウマであることはご想像の通り。
皿に盛ったらさらにコショウを振りかける。
かならず粗挽きのブラックペッパーを使うべし。
挽きたてが旨いので挽きたてをかける。
ミルをゴリゴリしてパラパラ落ちてくるブラックペッパーの香りがまた良い。
そして完成したら必ずやることは；
